The children enjoyed the pumpkin soup and brown bread during our Halloween Feast. It’s always a great occasion when everyone is together eating and chatting in the same room.
Pumpkin Soup Recipe: Preparation time: 15 to 30 minutes. Ingredients 750g pumpkin diced, 250g potatoes diced, 3 medium onions diced, 3 chicken stock cubes, 840ml water, 250ml thickened cream, salt and pepper.
Place all ingredients except cream in a large saucepan. Simmer until vegetables are tender. Remove from heat. Blend with stick blender until smooth. Add cream and stir through (do not boil after adding cream) Season to taste.
